Jackfruit sate lilit in short
Vegan sate lilit uses young green jackfruit instead of minced fish or chicken. Simmer and squeeze canned jackfruit, shred it, knead it with fried base genep made without shrimp paste, grated coconut, lime leaf, and rice flour, press it onto lemongrass, and grill for 8–10 minutes. This is the plant-based way to make sate lilit at home. The shape and the grill are the same as the regular sate lilit from the Petulu class with Chef Wayan. Young green jackfruit takes the place of the minced fish or chicken, and the base genep is fried without shrimp paste.

Jackfruit sate lilit ingredients
- 400g young green jackfruit in brine, drained weight
- 4 tablespoons fried base genep, made without shrimp paste
- 80g freshly grated coconut, or unsweetened desiccated coconut soaked in 3 tablespoons warm water
- 2 lime leaves, sliced into threads
- 1 teaspoon palm sugar
- 1/2 teaspoon salt
- 2 tablespoons rice flour or tapioca starch
- 12 lemongrass stalks, outer layer removed
- 1 tablespoon coconut oil, for brushing
How to make jackfruit sate lilit
- Simmer the drained jackfruit in fresh water for 15 minutes to wash out the brine. Drain, cool, then squeeze it hard in a cloth until no more water comes out.
- Shred the jackfruit with two forks, or pound it briefly in a mortar, until it looks like coarse mince. Cut out any hard core pieces.
- Mix the jackfruit with the fried base genep, grated coconut, lime leaf, palm sugar, salt, and rice flour. Knead with your hand for a minute until it holds together when squeezed.
- Take about two tablespoons and press it around the thick end of a lemongrass stalk, squeezing so it grips. Repeat, then chill the skewers for 15 minutes so they firm up.
- Grill over medium charcoal or in a hot grill pan, brushing with coconut oil, for 8–10 minutes, turning until browned in spots. Serve warm with sambal matah and rice.
If the mix falls off the stalk, it is too wet. Squeeze the jackfruit again or add another spoon of rice flour. The fried paste matters more than the jackfruit: raw base genep tastes harsh on the grill.
Jackfruit sate lilit questions
- What can I use instead of meat in sate lilit?
- Young green jackfruit, squeezed dry and shredded, holds onto lemongrass best. Firm tofu or tempeh mashed with a little rice flour also works, but falls apart more easily on the grill.
- Is base genep vegan?
- Only when it is made without shrimp paste. Shallot, garlic, roots, candlenut, chili, and spices are all plant-based. The Petulu kitchen grinds it that way on request.
- Why does my jackfruit sate fall off the stick?
- The mix is too wet. Squeeze the jackfruit harder, add a spoon of rice flour, and chill the skewers for 15 minutes before grilling.
