The short answer
Authentic at Warung Tumang Bali means a named chef (Wayan Suryana), a stone mortar for base genep, a warung kitchen in Petulu with a rice-field view, groups capped at eight, and a meal you cook yourself. Shared class IDR 350.000 per guest; private IDR 700.000. Morning sessions add the Ubud market; both include the village rice walk.

A real warung stove, not a staged set
Warung Tumang Bali is a working kitchen in Banjar Laplapan, Petulu, Ubud, Gianyar, Bali 80571. Chef Wayan Suryana teaches in English. You grind base genep on a stone mortar, press sate lilit onto lemongrass, slice sambal matah, and usually finish with dadar gulung. It is hands-on: not a demonstration you watch from a stool.
Shared classes stop at eight guests. Vegetarian and vegan cooks use the same stove; shrimp paste comes out of the paste when you ask. You leave with a printed recipe booklet and the meal you made.
What authenticity is not
It is not a hotel kitchen with pre-measured cups and a microphone. It is not a farm ticketed for photos while someone else cooks. It is not a private villa chef service dressed up as a class. Authentic here means village ingredients, village tools, and a fee that matches a half-day of cooking: IDR 350.000 per guest shared, or IDR 700.000 private.
The market and the fields before the fire
The morning session starts at the Ubud morning market so you collect the roots and leaves yourself, then walks the Petulu rice-field bunds into the kitchen. The afternoon session skips the market, keeps the walk, and ends in dinner. Both keep the terrace view and the calm of a small village table.
Pickup is free in the main Ubud area. From Seminyak, Sanur, Uluwatu, and other south Bali stays, an optional shuttle is IDR 650.000 per booking, or arrive with your own driver using the pin we send.
How to judge any Balinese cooking class
Ask who teaches, how many guests share the table, whether you grind the paste yourself, and whether the kitchen is a family warung or a tour hall. Then check the address on a map. Petulu is about 10 minutes from central Ubud, depending on traffic — close enough for a half-day, quiet enough that the paddies, not the traffic, set the mood.
